where to get
i used the halal chicken that i have already stock in the fridge. but for aston in-campus residents, you may grab the halal chicken easily from sainsburry’s​. while for all the other ingredients you could find them in the indoor market’s chinese stall which generally sells things cheaper compared to day-in and xing fat.

you must have
1 chicken, preferably the free range one and halal for muslim (Irene thinks that the halal chicken available at sainsburry’s​ are more tender)
2 lemongrass, to get the flavour crushed the base part until flat
4 lemon leaves, washed in cold water and tore them to get the flavour
1.5 lt water to boil
sea salt and sugar
olive oil
200 gr rice noodle, stirred in hot water until soft, dried and put aside
1 spring onion, washed, chopped and put aside
optional: 1 celery, washed, chopped and put aside
3 boiled eggs, peel, cut into half and put aside
1 lemon, sliced and put aside
bean sprout, boiled
optional: cabbage, chopped and boiled
so Indonesian: any kind of chilli

then whiz these up
50 gr shrimp, skinned-off and stir fried
2 cloves of red onion, unpeeled
6 cloves of garlic, unpeeled
2 cm or 2 teaspoons of turmeric
½ cm or ½ teaspoon galangal
1 cm or 1 teaspoon ginger
2 teaspoons of ground black pepper
5 candlenuts, burnt over the fire or a heat electric stove until golden

first, boil chicken with lemongrass, lemon leaves, salt and sugar until it softened. drain the chicken then break the meat up with your hand. put them back in the soup.

second, prepare a pan on a low heat with olive oil. add the grounded ingredients,​ cook gently for sometime until you notice the strong smell. pour these onto the soup and simmer gently until the chicken is cooked and the ingredients has flavoured it nicely.

third, put the noodle, egg and vegetables in your bowl. pour the soup into the bowl, squeeze the lemon juice over the top and sprinkle it with the chopped leaves. it officially will be called indonesian meal when you serve it with chili.
