Just visit Volos,it's the perfect place for someone to relax,try traditional recipes and go to beautiful beaches .

100% agreed! Try to avoid the touristic destinations and try traditional locations to feel the true Greek life!

Lesvos island... Not very touristic, beautiful beaches, awesome food, different people, mountain and sea combined. Easy access even from Turkey if you find cheaper tickets to Istanbul instead of Athens. Then you can take a 6 hours bus and 1hour ferry and you are there!

I would say Santorini. It's beautiful and not so loud.

If you want an island with the typical greek architecture you have in mind, it should be Santorini.
If you are looking for a "greener" island, it should be Zakynthos (there's a beautiful beach called the navagio beach, which is quite famous. you can only reach it by boat i think though) =)
