If you are not very good with spicy foods, you need to tell the waiter "少点辣"(Less spicy) or "不要辣" (No spicy) in Chengdu and Chongqing, but I can't promise it will help at every time, for some dishes don't have no spicy version.

The muslim foods you can find in Xian do not have anything from pig, they think pig dirty and stupid, and eating pork may let people become dirty and stupid. Strict muslim won't drink alcohol drinks and if you drink alcohol drinks there, they will drive you out. Muslim foods are mainly cooked with beef, mutton, chicken, onion, potato, tomato and some vegetables, and usually have "清真" in restaurant name, which identify themselves with muslim food provider. You also can know who is muslim by their clothes: women wear turban, and men with a white square hat, but men usually don't wear a robe like Arabian. Most of muslim restaurants are very sober. I'm not sure if you will like it, but it's the popular style of small restaurant in China.

Noodle(面 [miæn]) is very popular in China. Most of noodle are made by flour, but in southern China, where no wheat planted, people use rice to made noodle, and it's called rice noodle (米粉, pronounced like [’mi:fən]) . Some kind of noodle are very thin are long, but one of famous noodle in Xian, called biang biang mian, is wide like a belt. A very interesting thing is that it's difficult to find the restaurant provide it, even it's famous. In most of small noodle restaurant, you can see chef made noodle on site.

I usually speak Mandarin in public, Shanghai dialect at home. I can understand part of Cartoonese and sing Cantoonese song, but I never speak Cartoonese.

Does American have different dialect. Does it different much ? Can it make you have difficult to understand each other?

Yes, I also watch movies, TV plays and drama to improve my English. American is famous with its movies and TV plays, it's easy to be found in China. What's kind of taste do you like? The food of different place have different taste in China. Suzhou's food has a little sweet, Chengdu's foods are spicy and pungent, Xian has many flour foods and muslim foods, Beijing has flour foods and palace dishes, Cantoonese like seafood and very good snacks. Foods are one of famous culture in China. Where chinese live, where chinese foods go.

There are many difference between Beijing and Shanghai, one of obvious difference is the building style.

The old department stores in Beijing usually don't have shop windows but Shanghai's have. The folk house of Beijing, Xian and Shanghai are totally different. I added a set of folk house picture in my album, and you can see the difference of them. But for large scope development of real estate, many old folk house have been replaced with new condos. One of characteristic of Shanghai is many different house. That's because Shanghai have many concessions one hundred years ago. People from Britian, France, Germany and Amerian built lots of houses with their countries style in Shanghai, and many of them are still there.

Of course, there are many difference between the two cities. If I tell you everything here, the article will be super long, so I have to giveup.

In China, English is a standard course of middle school. I also learnt English from middle school time, but I could just read English after school. For my English skill, my writing is much better than speaking. I have chatted with an American by skype three years ago, but we had to give up after two minutes, for my speaking and listening of English were obviously not good enough. After that, I restarted learning English in EF English school, where I spoke English every day. Now, I work in an international company where I have to speaking English between colleagues from different country and my speaking are also improve much. I come to interpal also for language exchange.

I have been to many places in China, but haven't been abroad. I get my passport two months ago, but have no chance to use it yet. Do you often travel abroad? Where have you been?

Oh thank you. Believe it or not, a Chinese person told me that. It worried me a little. I did not believe they would really be that way, but I had to ask. I do want to explore a little on my own when I land in Beijing but did not know how the people would take to that. I am so excited to meet the people and know the customs better. Whatever country I am in, I try to surround myself. Is Beijing all that different than Shanghai?

Your English is quite good. May I ask where you learned? Do you travel?

I would much rather practice speaking Chinese. I heard that the people don't care much for Americans. Is this true? I do not want to offend anyone while I am there. I want to get to know the people as well as their world.

Xian and Beijing have both been as capital for about 1000 years. I'm sure you will enjoy your historical journey there, but if you want visit any museum in China, don't try it in Monday as it is the rest day for most of them. And you will find by map, that the street of them are usually due north-south or due east-west, this is the standard street style of a capital in China. Compare the map of Beijing and Shanghai, you will find the difference.

You can speak English in China, but you need to be sure they are good at English speaking. If you want to speaking Mandarin, You'd better to know how to say following sentence in Chinese:
- Hello
- Can you speaking English?
- Thank you
- Bye

If they can speak English with you, it's enough. Speaking English slow and clear and using the words which are often used will be very helpful to improve your communication with Chinese who can speaking English much more. English is a standard course in China, but most of Chinese can just read English not speaking.

Team travel for the most part. I will be going alone and I assume everyone else will have someone. I picked November specifically for the weather. I didn't want it to be too cold or too hot. It would make packing clothes difficult. I will fly into Beijing. There is a train from Chengdu to Chongqing. And then a cruise to Shanghai. I can't wait to walk next to history. America's history is old but not over 3000 years.

I am going for the historical significance China has. I love archeology and since China is one of three cultures that is the birth place of civilization, I wanted to go. I will be in Beijing, Xian, Chengdu, Chongqing, Suzhou, Tongli and Shanghai. I am really excited. I learned some Chinese as a child and more as an adult. It has been years since I have conversed and my tones are off. One friend has assured me that once I am surrounded by the language, I will find my way again. :D
